Don't throw away that leftover spaghetti...

Spaghetti Pie

Leftover spaghetti? Don't throw it away. Instead, add to eggs and add a little of this and a little of that.....

Only kidding... here's the recipe:

Preheat oven to 375 ⁰

8 eggs, beaten till fluffy

Cracked black pepper

Salt and pepper to taste

8 leaves of fresh basil or your favorite fresh herbs, chopped

1/2 lb leftover cold spaghetti

1/2 cup grated Locatelli cheese

1/4 cup chopped red vinegar peppers

1/4 lb pepperoni, ham or prosciutto, chopped (optional)

In large bowl, whip up eggs, add the remaining ingredients. 

In very large skillet, add 1/4 cup good olive oil. Get the oil nice and hot.

Carefully pour the egg mixture into the hot oil. Let the omelette solidify on bottom. Careful not to burn. After you shake the skillet, making sure the omelette is solid, slip into the preheated oven. Let cook for about 15 minutes.

You should be smelling the omelette cooking, but not burning. After 15 minutes, switch from baking to broiling for 5 minutes.

DONT YOU DARE WALK AWAY!

That's right, you're going to watch this omelette brown on top, but not burn.

Remove and let it cool a little before serving.

Serve with side salad.
