Ingredients:
5 oz baby bella mushrooms, sliced
1/2 white onion, chopped
10 oz package frozen peas
4 slices bacon, chopped
2 TBS butter
2 TBS olive oil
Fresh herbs, e.g., basil, fresh parsley
1/4 cup wine or broth
Directions:
Saute onion in olive oil, set aside in large frying pan.
Separately, cook chopped bacon till crispy and add in to the onions. Push to the side of pan and make room for the mushrooms.
Let mushrooms cook and sear. Add the butter and allow to simmer for a few minutes. Add wine, let the wine evaporate before adding the frozen peas.
Simmer, add herbs and salt and pepper to taste.
Serve as a side or combine with 8 oz cooked little pasta shells or any small pasta of your choice.
