This is the fastest dinner you can make on a busy day. Make sure you have a bag of frozen raw shrimp in the freezer. These are the ingredients:
One pound of large shrimp (I leave the tails on for a prettier look)
4 TBS unsalted butter
1/4 cup good olive oil
1 Tbsp finely chopped garlic
Fresh parsley
One whole lemon, squeezed
Salt and pepper to taste
1 Tbsp drained capers
Directions:
Cut the back of the shrimp to remove any black grit. Pat the shrimp dry.
Next, melt the butter in a large skillet. Add the olive oil. Add the garlic; cook until the garlic begins to get golden.
Add the shrimp and fresh lemon juice, and capers. Saute by shaking skillet and stirring for just about 2-3 minutes or until shrimp become pink and firm. Add salt and pepper.*
Garnish with fresh parsley and lemon wedges.
Serve with rice and a green salad or green vegetable.

*If you want to stretch the sauce, simply add a tablespoon of butter or broth till the consistency you desire.
