This is my mother's recipe, but I have tweaked it over the years. To me, this is the only way to eat sweet potatoes. Tender, sweet and properly cooked.
My husband decided to slice up a few apples and add to the potatoes before going into the oven.
Viola! Magic happened - I'm hooked. You have got to try making these once...and you'll be hooked too..
Ingredients:
5 lbs peeled, sliced sweet potatoes
2 apples, any kind, peeled, cored and sliced thin but firm
Real butter, 1 stick+ cut up
1+1/2 tsp Cinnamon
1/2 cup Brown sugar
1 tsp salt
Black pepper to taste
Directions:
On cookie sheet, place potato slices on one layer. Mix in sliced apples.
Sprinkle with sugar, cinnamon, salt and pepper. Top with cubed butter.
Place in 350 degree oven for approximately one hour.
Goes wonderful with pork, turkey, and ham....

Hi Jan - The brown sugar- do you use the Domino dark or light brown sugar, or the raw, brown colored sugar?
