Left over Chinese food for dinner tonight. Have some white rice leftoverr from my meal. Cooked a cup of white rice. Put it in the fridge to cool down.
Meanwhile, you'll need to chop up the following:
2 stalks celery, diced fine
3 scallions, sliced (use tops and bottoms)
1/2 cup frozen peas (optional)
Left over sausage, chopped to size of celery (had left over from breakfast)
1 whole egg, scrambled
Light soy sauce (to taste)
Grated fresh ginger or 1/2 tsp powder)
Let's make fried rice:
In large wok or fry pan, add 2 Tbsp peanut or canola oil. Get nice and hot. Add scallions, ginger, celery, sausage. Stir fry until they are coated and well done.
Make a well in the middle of vegetables, add scrambled egg and cook quickly, then combine with the rest of vegetables. Add cold rice and and stir to combine with fried vegetables. Add frozen peas.
Stir well to combine ingredients. Add soy sauce a little at a time getting the rice to the color that you desire.
Your kitchen should smell like a Chinese restaurant.
Makes enough to feed 4 as a side.
You will want to make this a lot.
You can add cooked shrimp, chicken, water chestnuts.
