My mother in law, Vi, was a wonderful cook. She stuffed her turkeys and chickens the same.
Here is what you'll need:
Whole loaf stale white bread, torn into pieces
12 eggs, beaten
1 cup grated Locatelli cheese
4-5 cloves of garlic, minced
1/2 cup dark raisins
3 lbs chopped beef
Salt and pepper to taste
1/4 cup Fresh parsley, chopped
1/4 cup Fresh basil, chopped
1/4 cup cold water
Directions:
In large bowl, break up the beef, add the bread pieces. Add eggs, cheese, raisins, pignoli nuts, salt and pepper, basil and parsley.
Slowly add cold water a little at a time for moisture.
In 9 X 13 pan, grease with butter. Add the contents like a cake batter.
Cover with foil. Place in oven for 45 minutes to 1 hour. Check for doneness.
To serve, cut into squares. Serve with the turkey.
I assure you, you will make this stuffing all the time once you've tasted it.
