Banana banana bread

It's not a typo. I call it Banana banana bread because I add chopped firm banana to the batter along with other additions.  I know you have a favorite recipe, but try this one. Let me know what you think....

Here are the ingredients:

3 ripe bananas, mashed

2 large eggs

1/2 cup melted unsalted butter (1 stick)

1/2 cup white sugar

1/2 cup brown sugar

1 tsp baking soda

1 1/2 cups white flour

1/4 tsp salt

1/4 tsp cinnamon

1 tsp good vanilla

1/2 cup walnuts or pecans, chopped or raisins

1 firm banana, chopped

Directions:

In first bowl, add ripened mashed bananas, eggs, melted butter and sugars.

Mix ingredients thoroughly with whisk, making sure all is blended well.

In another bowl, add flour, baking soda and salt. Stir to combine before adding to egg mixture.

Now that you have your batter, add nuts, vanilla and firm banana pieces. Fold into mixture.

Important:

Let the batter rest on the counter for about 1/2 hour.

Preheat your oven to 325. Bake for one hour. Test before removing from oven.

Let it cool before cutting.

Note: I freeze my very ripe bananas so that they will be not wasted for future banana bread.

Note: when making these muffins, bake for 25-30 minutes. Makes 12 regular size muffins.
