Ready to dig in....wish you could smell it.

Spinach Artichoke Dip a la Gianna

Going to TGIF tonight. Thought I'd make an oldie but goodie appetizer. There are so many recipes out there. However, I like to season my ingredients before I combine them with the cheeses. Here is my recipe:

Ingredients:

1- 10 oz frozen chopped spinach, thawed and drained very, very well

2-3 cloves garlic, chopped

2 TBS butter

10 oz frozen artichokes, thawed and drained, and chopped

Black pepper

8 oz cream cheese, room temperature

1 +1 /2 cup shredded mozzarella

1/2 cup sour cream

1/3 cup mayonnaise

1/2 grated Parmesan cheese

Directions:

Place butter in frying pan, add chopped spinach and chopped artichokes.

Stir and saute for a few minutes until coated and seasoned. Set aside.

In a large mixing bowl, add cream cheese, sour cream, and mayonnaise. Beat with hand mixer until fluffy.

IAdd cooked spinach and artichoke combination to the cheese mixture, along with grated cheese and shredded mozzarella, leaving 1/4 cup for later.

In a 9x9 baking dish or a large pie plate. Add the well blended mixture. Spread evenly. Too with remaining shredded mozzarella. 

Preheat the oven to 375 degrees. Bake for approximately 15-20 minutes until the dip is bubbly and golden.

Serve with your favorite crackers, sliced baguette, or raw veggies.
