It's Saturday, that means steak dinner when I was growing up. Fixing up a nice NY strip. Desire potatoes tonight. What better way to eat steak, potatoes on the side. Here's what you'll need:
6-8 medium size red potatoes
Salt and pepper to taste
Olive oil
Tsp of oregano
Tsp of garlic powder
Tsp of onion powder
1/2 stick of butter, melted
Directions:
Wash and scrub potatoes, clean and dry. On cutting board, use very sharp knife and cut slices but not all the way through. Potatoes should be in tact, but resemble a slinky toy.
In large bowl, add all ingredients except the melted butter. Roll each potato in liquid coating.
On a foiled cookie sheet, arrange potatoes side by side, allowing a little room in between.
Place in preheated 375 degree oven. Cook on bake for 45-60 minutes. You want them to be fork tender. Smash down to fan them open. Brush with melted butter every 15 minutes.
Broil on low for 15 minutes, creating a crust on slices.
Serve with dollop of sour cream.
