
This luscious dessert is a real pick me up for hot summer days. Make sure it's really chilled. The coffee should be strong and the liqueur be strong, as well.
Ingredients:
1 1/2 cups of heavy cream
8 oz container mascarpone cheese (sold at supermarkets)
1/3 cup white sugar
1 tsp vanilla extract
1 1/2 cups cold prepared espresso coffee
3 Tbs Kahlua or another liqueur of your choice
1 package Lady Fingers (vanilla or chocolate)
Cocoa powder for dusting the top
Instructions:
Add whipping cream to a mixing bowl and beat on medium speed with an hand electric mixer. Slowly add sugar and vanilla and continue to beat until stiff peaks are formed. Add mascarone cheese and fold in until it is combined. Set aside.
1. Add coffee and liqueur to a shallow bowl. Dip the lady fingers, one by one into the cold coffee (don't soak them - just quickly dip on both sides to wet them. Start laying them in a single layer on the bottom of an 8 x 8 pan.
2. Smooth half of the mascarpone mixture over the top of first layer of lady fingers. Top with remaining layer of dipped lady fingers. Smooth remaining mascarpone cream over the top.
3. Dust cocoa powder generously over the top (I use a fine mesh strainer to do this). Refrigerate for at least 3-4 hours or overnight before serving.
Serve with hot espresso or a small glass of liqueur. Salute!
